S’mores Cupcakes | kMix Recipe Series

I’ll let you into a little secret… I’m so used to doing everything baking wise by hand I was actually a bit nervous when I was asked if I wanted to try out the Kenwood kMix! Let’s just say after trying it out TWICE in one weekend there’ll be no looking back.

I wanted to start my Kenwood kMix series* with something simple. The acid test of baking you might say… Cupcakes! Seeing as we were off to a BBQ I decided to make S’mores cupcakes for Dr W and my friends.

The kMix is super easy to set up, and with a quick whirl through the instructions I knew what I was letting myself in for. The instructions came with suggestions for what speeds you can do each phase of making cakes with, helpful for a newbie like me to a machine like this.

Always guilty of too much cake mix in the cupcake cases… (Why they’ve exploded a bit!)

Just as a tip – I would still sift your flour and icing sugar when using. It means your cakes will be perfect!

S'mores Cupcakes
Yields 18
Gooey chocolatey cupcakes with the addition of mini cookies and marshmallows!

Cakes
  1. 220g Softened butter, unsalted
  2. 180g Self raising flour, sifted
  3. 40g Cocoa powder
  4. 220g Caster sugar
  5. 40g Mini smarties or chocolate chips
  6. 4 Eggs
Buttercream
  1. 150g Soften butter, unsalted
  2. 2 tbsp Milk
  3. 350g Icing sugar, sifted
Decoration
  1. Mini marshmallows
  2. Mini cookies
For the Cakes
  1. Heat the oven to 170C fan/180C.
  2. Cream the sugar and butter together. If using a mixer, use the middle speeds and leave this for a few minutes until soft.
  3. Add in the eggs, use the middle speeds for 2-3 mins to beat the eggs into the mixture.
  4. Fold in the flour, cocoa powder and mini smarties. If using the mixer use a minimum speed setting and don't do this for long.
  5. Spoon in to cupcake cases and put into the middle of the oven for 15-18minutes, keeping an eye to make sure they don't catch.
  6. Leave to cool when cooked, then make the buttercream.
For the Buttercream and Decorating
  1. Cream all the ingredients together, this takes some time by hand, but on the lower speed setting on a mixer it takes a few minutes.
  2. Spoon into a piping bag and then pipe onto the tops of the cakes. Decorate with a few mini marshmallows and a cookie.
  3. Enjoy!

I’m so impressed with the kMix, the cakes came out really well. Far better than I can do by hand, especially with my arthritis playing up at the moment. I can’t wait to share more of my recipes with you!

    These look amazing. But, I have still never had smores. I am going to have to try these to change that.

    Ooh these look so good, I love smores so I’ll definitely have to try these out! The mini cookies and the marshmallows are just the cherry on top too. – Tasha
