5 Happy Things #31 | Home Alone Edition

June 18, 2018

It’s been a little while since I penned one of these updates. I thought it would be a good time, now we’ve settled in the house a bit more and I had a weekend to myself. Also there’s been plenty of stuff keeping me happy in the last few weeks!

We’ve been in the house almost two months, my 30th birthday is coming up and we’ve got an exciting holiday planned for September. But whilst we’ve got lots to look forward too, there have been plenty of Happy Things going on day to day!

Parkrun Worcester

#1 Really getting into Parkrun

I recently spoke about how I’d lost my running mojo. Now I have been a bit off and on again (annoying arthritis) but I am a lot more comfortable at running 5km. I’ve really been enjoying going to Parkrun every weekend and have started managing smaller runs after work mid week. I must admit I’m still trying to get my legs around the longer commute and dragging myself for a run after!

#2 Halloumi

Ok, I must admit I wasn’t the biggest fan of halloumi recently. Until I discovered soaking it for 20 minutes prior to cooking (to reduce the saltiness) and brushing honey over for cooking. Oh wow, that really is a game changer. I made Halloumi Burgers this weekend, with homemade guacamole, chilli jam and tomato. Just delicious – I’ll be sharing the complete how too tomorrow.

#3 Epic breakfasts

I am a huge breakfast fan, at weekends because I have more time I always indulge at breakfast. I only recently got into croissants and I can’t work out why. They’re pretty wonderful and with melty cheese – oh my! You also can’t beat a soft boiled egg can you?

#4 Weekends alone

I haven’t had a proper restful weekend in ages. Dr W was away in the Lakes this weekend, so I took the opportunity to do some running, chilling out and mainly binge watching terrible chick flicks. I also started reading again, it’s been quite some time since I read for pleasure.

#5 Making my office space my own

I already shared this on instagram, but I want to share it again. Minus the printer, which will get it’s own home soon I hope (or be sent to the big printer heaven in the sky) I love my desk space in the spare room. I bought these grids from Amazon (not affiliate) as I’ve see them everywhere. I love the simplicity and the ability to switch up what’s on show easily!

What’s been making you happy lately? Let me know in the comments,

I can definitely relate to #2, #4, and #5! The little tip with halloumi is interesting and I will try it next time, as the saltiness can get a bit much!

Such a wonderful post and looks like you have done so much in the last few weeks as well, totally loving the tip on how to cook Halloumi, Like you I have always found it a tad bit salty for me, hence will be trying your tips next when I cook with it.

You’ve picked some brilliant things here, those Roald Dahl books alone are enough to make anyone happy. Have you ever been to his house/museum in Great Missenden? It’s very sweet
