When your bestie is coming to stay, you have to spoil her. I love Sarah to bits and I know Rocky Road is her fave, so I went a bit mad and made what I would call, My Ultimate Rocky Road.

Taking inspo from my favourite baker Bakeorama, I decided to go all out and make the Ultimate Rocky Road. I picked up sweets, awesome biccies, extra chocolate, sprinkles, the whole ruddy works! It’s about a bajillion calories a slice, but calories don’t exist at the weekend so it’s all good.

My Ultimate Rocky Road isn’t difficult and it technically isn’t a bake, as you just pop it in the fridge after making. What I love is the versatility of such a recipe. You can add anything you want to it, sweets, any biccies you like etc. Plus I really did have fun making it- I had first dibs on licking the spoon after! I’ve sneakily had a slice to taste test, and it’s pretty wicked. Here’s hoping Sarah enjoys when she gets here later 🙂 I’ve had to bat Dr W’s hands away from it… Haha!

No Bake Ultimate Rocky Road

Ultimate Rocky Road Recipe

A wonderfully chocolatey, crunchy and gooey treat!
Prep Time 10 minutes

  • 125 g Butter
  • 300 g Chocolate
  • 3 tbsp Runny honey
  • 70 g Marshmallows
  • 70 g Sweets
  • 200 g Ginger Biscuits
  • Sprinkles to decorate


  1. Melt the butter in the pan, take off the heat. Add in the honey and the chocolate broken up. Stir until all melted and combined.
  2. Stir in half the biscuits and half the marshmallows and sweets until coated with chocolate. Then stir in the rest of the biscuits and a few more of the sweets.
  3. Pour into a lined tin, and spread out with a spatular. Sprinkle over the last of the sweets and go mad with the sprinkles.
  4. Cool in the fridge for 2 hours or overnight. Then chop into rectangles/squares.

    Oh drool!! I usually add rich te but will try with ginger biscuits next time

      I usually use Oreos or chocolate digestives, the ginger biccies work well with the dark choc I used 🙂

      Tbh I usually bake for other people, so I never eat much of it. Will take in the leftovers to work! Hehe!
