Jerk Chicken Wraps and Mocktails | Caribbean Food Week

Once again it’s that wonderful time of the year again, Caribbean Food Week! Dr W loves Caribbean food so we love to celebrate by cooking tasty food and drinking tasty cocktails.

With Dr W having been away and me having a super busy week. We decided on a simple way to celebrate Caribbean Food Week this time. I marinated chicken in a simple jerk paste and gathered the other ingredients for Jerk Chicken Wraps. We also took to mocktails this year instead of our usual Dark and Stormy‘s. I’ve shared the recipe below for these.

We opted for wraps because they’re simple. I fried off onion and pepper, then added in the marinated chicken and a bit of extra paste. Cooked it all on the hob for 15-20 minutes until the chicken was cooked through. I also prepared some sliced avocado and our other sides. Mainly hot sauce, and some sour cream to cool it all down. We tried out the Encona Hot Sauces, super hot, but an amazing extra kick (to an already hot dinner)!

To cool it all down we made some lovely refreshing drinks. Our mocktail was fresh and fruity and super easy to make…

Fruity Ginger Fizz

  • 5ml Raspberry syrup
  • Juice of half a lime
  • Can of ginger beer
  • Ice
  • Lime wedges to garnish
  1. Fill your glass with ice, we used those hipster Kilner things.
  2. Pour the lime juice and raspberry syrup into the glass, add the ginger beer then stir.
  3. Garnish with lime wedges and funky straws. Enjoy!
  4. NB. If you wanted to make it boozy, you could add rum in at step 2 as well.

    My daughter’s boyfriend loves hot sauces, so I bought him the Encona one. He loved it. Definitely giving your mocktail a try but perhaps with a little rum.

      They’re great sauces for any hot sauce fan! The mocktail would definitely work with a glug of gin 🙂

    These look divine Emma! You’ve made me really hungry haha. And the ginger drink seems like the perfect accompaniment, isn’t it weird that ginger helps with spice rather than making it more spicy?
