Vegan Ice Cream Sandwiches with Valsoia from Ciao Gusto | Recipe

Now whist I’m not vegan, I have friends who are, I also have friends who can’t eat dairy. So my baking repertoire has to have vegan recipes in it. Today I’m sharing a vegan cookie recipe that I used to make Vegan Ice Cream Sandwiches with.

I thought it would be fun to make Vegan Ice Cream Sandwiches. Not only are they easy, they’re fun to eat too. If you’re having a Christmas Eve film night like we are, they’re the perfect movie food. The Valsoia Tiramisu Vegan Ice Cream is particularly tasty, but the Salted Caramel is delicious too. The texture was just like normal dairy ice cream, which is great because some vegan ice creams I’ve tried haven’t been as smooth.



Vegan Chocolate Chip Cookies

Easy peasy vegan cookies, that are perfect for making Vegan Ice Cream Sandwiches with.

Servings 12 cookies


  • 100 g Caster sugar
  • 100 g Vegan spread, soft at room temp
  • 1 tbsp Golden syrup
  • 150 g Plain flour, sieved
  • 1 tsp Baking powder
  • 175 g Vegan chocolate chips
  • 1 tbsp Soya milk


Making the cookies

  1. Preheat your oven to 180°C/160°C fan. Line a baking tray with greaseproof paper.
  2. Cream together the vegan spread and the sugar in your mixer (I used my trusty Kmix) until light and fluffy (this can take several minutes).

  3. Mix in the golden syrup and beat again.

  4. Mix in half of the flour with the chocolate chips. Once this has combined mix in the rest of the flour and the baking powder and the soya milk.

  5. Keep on mixing until the dough starts to form a ball in the mixer. When very dough like turn out onto a floured surface and working with your hands.
  6. Separate the dough out into 12 sizeable balls. Don’t press them down and place on a baking tray (I baked two batches of 6).
  7. Place in the oven for 12-15 minutes.
  8. Remove from the oven and leave to cool on the tray for a few minutes, before transferring to a wire rack.

Assembling the Vegan Ice Cream Sandwiches

  1. Take two cookies and a dollop of vegan ice cream and push together.

Recipe Notes

Serve on a night in when you're in your jammies in front of the telly, having a movie night.




If you want to pick up the Valsoia vegan products from Ciao Gusto, you can order them at Ocado. The cookies I made are based on these Jelly Bean Cookies I’ve made before with vegan tweaks. Of course I switched out jelly beans for vegan chocolate chips, which I also found on Ocado.

    Wow those look really amazing and if I wasn’t feeling so sick after eating so many mince pies and quality streets I’d hoover those up!

    I’ve never heard of these icecreams – must investigate when I’m down south at my mums – as there’s a waitrose in her town. I’ve been lactose intollerant over 30 years and for years I could only get vanilla ice cream – I’m loving the sound of the tiramasu icecream. Thanks for the info Emma

      I haven’t seen in Waitrose, but you can definitely order from Ocado. Ben and Jerrys do some amazing vegan ice creams.

    I have never tried to make an ice-cream sandwich but I do love this ice cream, so definitely one to try x

      You could even cheat and not make your own biscuits!
